Stinging Nettle: Recipes

It's almost spring time! And that means fresh nettles! The young plants are perfect for harvesting. They like to hide among other plants. It can be an adventure finding them.

Always make sure to give thanks to the plants for providing us with food and nourishment :)

Our favourite way to eat nettles is Sandy Ollsin's famous recipe for...

Nettle Squares:

350* - in 9 x 13" pan

  • 4 TB. Butter

  • 3 eggs

  • 1 cup flour

  • 1 cup milk

  • 1 tsp. salt

  • 1 tsp. baking powder

  • 1 TB. Dijon mustard

  • 1/4 cup chopped chives

  • 1 lb. Edam cheese

  • 12 oz. fresh nettles, washed & scissor-clipped

Melt butter in pan, in the oven. In large bowl, beat eggs, then add flour, milk, bp, salt, mustard & chives. Fold in grated cheese and nettles (cut into the mix with scissors, while holding nettles with tongs, in other hand). Pour into pan on top of butter. Bake 35 minutes, or until set.
Cool. Cut into fairly small squares and serve.  Mmmm….

Optional Variations:   For extra zing, add in a bit of blue cheese or gorgonzola, or add thinly sliced mushrooms to mixture, or try substituting Edam with other cheeses (mozza, cheddar, or gouda, etc.)

You can also add nettles to soup, here is an easy, cleansing soup recipe by Don Ollsin:

  • 4 cups water

  • one bouillon cube

  • one cup fresh nettles

  • 1/2 cup brown rice (rinsed)

  • a few fresh tomatoes cut up

Bring water, bouillon and nettles to a boil. Add rice and tomatoes. Turn down and simmer for 50 minutes.

Stinging Nettle, Urtica dioica

Found in the temperate regions of Europe, Britain, Asia, Japan, S. Africa, Australia, Andes and N. America. Indians used to make cord and fish nets. Used in Britain to make very fine linen. Discontinued because the nettles were too difficult to cultivate.
